How to Make 3 Cheese Artichoke Bites
- Preheat oven to 325°F (160°C).
- In a medium skillet over medium heat, sauté 1/2 cup chopped onion and 2 cloves minced garlic in 2 tablespoons olive oil until softened, about 5 minutes.
- Drain any excess oil from the onion mixture and set aside.
- In a large bowl, combine 1 (14-ounce) can artichoke hearts, drained and chopped, 2 large eggs, 1 cup shredded cheddar cheese, 1/2 cup shredded parmesan cheese, 1/2 cup shredded mozzarella cheese, 1/4 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon garlic powder, and 1/4 cup chopped fresh parsley (optional).
