- Preheat oven to 160°C (Gas Mark 3). Grease and flour two loaf tins.
- In a large bowl, rub 175g (1 1/2 cups) of softened margarine into 225g (1 3/4 cups) self-raising flour until the mixture resembles breadcrumbs.
- Add 175g (1 1/4 cups) caster sugar, 1 tsp baking powder, 1/2 tsp ground cinnamon (optional), and 100g (¾ cup) mixed dried fruit (sultanas, raisins, currants – or your favorite mix!). Mix well to combine.
- In a separate bowl, lightly whisk together 2 large eggs and 100ml (¾ cup) milk.
- Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
- Divide the batter evenly between the prepared loaf tins.
- Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean. If browning too quickly, cover loosely with foil.
- Let the loaves cool in the tins for 10 minutes before transferring them to a wire rack to cool completely.
