How to Make Cornish Loaf

  1. Preheat oven to 160°C (Gas Mark 3). Grease and flour two loaf tins.
  2. In a large bowl, rub 175g (1 1/2 cups) of softened margarine into 225g (1 3/4 cups) self-raising flour until the mixture resembles breadcrumbs.
  3. Add 175g (1 1/4 cups) caster sugar, 1 tsp baking powder, 1/2 tsp ground cinnamon (optional), and 100g (¾ cup) mixed dried fruit (sultanas, raisins, currants – or your favorite mix!). Mix well to combine.
  4. In a separate bowl, lightly whisk together 2 large eggs and 100ml (¾ cup) milk.
  5. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix.
  6. Divide the batter evenly between the prepared loaf tins.
  7. Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean. If browning too quickly, cover loosely with foil.
  8. Let the loaves cool in the tins for 10 minutes before transferring them to a wire rack to cool completely.
