- Melt 1/2 cup of lard in a saucepan over low heat.
- In a large bowl, combine 2 cups warm water (105-115°F), 2 teaspoons active dry yeast, and 1 1/2 cups sifted all-purpose flour. Mix until smooth.
- Add 1/4 cup honey, the melted lard, 1 teaspoon salt, 1/2 cup dry milk powder, and 1 1/2 cups sifted whole wheat flour. Mix thoroughly.
- Attach a dough hook to your stand mixer and add most of the remaining 2 1/2 cups all-purpose flour.
- Continue kneading until the dough pulls away from the sides of the bowl; add enough of the remaining flour to achieve the desired consistency.
- Lightly grease a large bowl with oil. Place the dough in the bowl, turning to coat all sides with oil.
- Let the dough rise in a warm place for 1 1/2 hours, or until doubled in size.
- Gently punch down the dough and let it rise for another hour.
- Divide the dough into 3 equal portions. Place each portion into a greased 9x5 inch loaf pan.
- Let the dough rise in the pans for another 30 minutes.
- Preheat oven to 425°F (220°C). Bake for 10 minutes.
- Reduce oven temperature to 375°F (190°C) and bake for an additional 15-20 minutes, or until a hollow sound is heard when the loaf is tapped on the bottom.
