  10. Add the egg mixture to the saucepan with the dry ingredients and whisk until smooth.
  11. Cook over medium-high heat, stirring constantly, until the mixture boils and thickens (about 5 minutes).
  12. Remove from heat and stir in the bloomed gelatin until completely dissolved.
  13. Stir in 1 teaspoon vanilla extract and 1 tablespoon rum (optional).
  14. Let cool for a few minutes.
  15. Slice 3 medium bananas and arrange one-third on the bottom of the graham cracker crust.
  16. Pour half of the pudding over the bananas.
  17. Layer another third of the bananas, followed by the remaining pudding.
  18. Top with the final third of the bananas.
  19. Refrigerate for at least 3 hours, or until the pudding has completely set.
