  4. Drain the beans thoroughly.
  5. In a large saucepan, combine the drained beans with 1 medium onion, chopped.
  6. Add 6 cups of water, bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Drain the beans, reserving 2 cups of the cooking liquid. Set aside.
  8. In a medium bowl, whisk together ½ cup of reserved bean liquid, ½ cup orange juice, ½ cup molasses, ¼ cup maple syrup, ¼ cup ketchup, 2 tablespoons prepared mustard, ¼ cup packed brown sugar, 1 teaspoon dry mustard, and 1 teaspoon salt.
  9. In a 2-quart bean pot or oven-safe Dutch oven, layer half of 4 ounces salt pork (sliced), then add all of the beans, burying 1 medium onion (peeled and whole) in the bottom.
  10. Pour the sauce mixture over the beans, adding enough reserved bean liquid to almost cover.
  11. Top with the remaining salt pork slices.
  12. Cover and bake at 300°F (150°C) for 4 hours, checking every hour and adding a little more reserved liquid if the beans seem dry.
  13. Uncover and bake for another hour, or until the beans are tender and the sauce has thickened.
