Comment préparer Fresh Fig Preserves

  1. Wash and gently peel 2 pounds of ripe fresh figs.
  2. Set aside the peeled figs.
  3. In a large, nonreactive saucepan, combine 4 cups granulated sugar and 1/4 cup fresh lemon juice.
  4. Add 1/2 cup of water to the sugar and lemon juice mixture, stirring until the sugar dissolves completely.
  5. Add the peeled figs and 2 thinly sliced lemons to the saucepan.
  6. If using, place 1 tablespoon ground cinnamon or 1 tablespoon grated fresh ginger (or a combination!) in a cheesecloth bag and add it to the saucepan. Alternatively, add the spice directly to the saucepan and remove it later with a strainer or slotted spoon.
  7. Cook over medium heat for approximately 45 minutes, stirring frequently to prevent sticking and ensure even cooking. The mixture should thicken considerably.
  8. Remove the cheesecloth bag (if used).
  9. Pack the hot preserves into clean, sterilized half-pint or pint jars, leaving 1/4 inch headspace.
  10. Remove any air bubbles by gently running a non-metallic utensil around the inside of the jar.
  11. Wipe the jar rims clean, and seal with lids and rings.
  12. Process in a boiling water bath: 5 minutes for half-pint jars, 10 minutes for pint jars. Ensure jars are completely submerged during processing.
  13. Remove jars from the canner and let cool completely. You should hear a satisfying 'pop' sound as the jars seal.
