  2. In a large skillet, brown 1 lb ground turkey over medium-high heat. Drain off any excess grease.
  3. In a large bowl, combine the cooked turkey with 1 cup uncooked long-grain rice, 1 (14.5 ounce) can diced tomatoes (undrained), 1 (10 ounce) can diced tomatoes and green chilies (Rotel), 1 cup chicken broth, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Cut the tops off four large bell peppers (any color). Remove seeds and membranes.
  5. Spoon the turkey and rice mixture into the bell peppers, filling them almost to the top.
  6. Place the stuffed bell peppers in a 2-quart casserole dish. Pour 1/2 cup chicken broth into the bottom of the dish.
  7. Cover the casserole dish with foil.
  8. Bake for 50 minutes, or until the rice is tender.
  9. Remove the foil, sprinkle 1 cup shredded cheddar cheese over the peppers.
  10. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
