- In a large skillet, brown 1 lb ground turkey over medium-high heat. Drain off any excess grease.

- Cut the tops off four large bell peppers (any color). Remove seeds and membranes.
- Spoon the turkey and rice mixture into the bell peppers, filling them almost to the top.
- Place the stuffed bell peppers in a 2-quart casserole dish. Pour 1/2 cup chicken broth into the bottom of the dish.
- Cover the casserole dish with foil.
