  1. In a small saucepan, combine 1 cup granulated sugar and 1 cup water. Bring to a boil over medium-high heat, stirring until the sugar is completely dissolved. Continue to boil for 5 minutes.

  3. Pour the cooled sugar syrup over the fruit, gently tossing to coat. Cover and refrigerate for at least 4 hours, or preferably overnight.
  4. After chilling, drain the fruit in a fine-mesh sieve set over a bowl, reserving both the fruit and the syrup separately.
  5. Fill a large pitcher about one-fourth full with ice. Add 1 bottle (750ml) of dry red wine (like Rioja or Tempranillo recommended), the macerated fruit, and 1 cup of the reserved fruit syrup to the pitcher.
  6. Gently stir the sangria, lightly mashing the fruit with a wooden spoon to release more flavor. Add 1 cup of chilled sparkling water or club soda. Taste and add more sparkling water to your preference.
  7. Serve immediately in wine glasses, garnishing each with 1-2 slices of fruit from the maceration.
