Comment préparer Swiss Roll

  1. Preheat oven to 220°C (200°C fan/Gas Mark 7).
  2. Grease and line a 20 x 30cm Swiss roll tin with parchment paper.
  3. In a heatproof bowl set over a pan of simmering water (ensure the bowl doesn't touch the water), whisk together 4 large eggs and 150g caster sugar until thick, pale and creamy (10-15 minutes).
  4. Remove from heat and continue whisking until the mixture is completely cool.
  5. In a separate bowl, sift together 75g plain flour, 1 tsp baking powder, and a pinch of salt.
  6. Gently fold the dry ingredients into the egg mixture until just combined.
  7. Pour the batter into the prepared tin and bake for 10-12 minutes, or until golden brown and a skewer inserted into the center comes out clean.
  8. Meanwhile, gently warm your chosen jam (approx. 100g apricot or strawberry jam).
  9. Once baked, immediately invert the cake onto a clean sheet of parchment paper dusted with caster sugar. Carefully peel off the baking paper from the top.
  10. Trim off any crisp edges.
  11. Spread the warmed jam evenly over the cake.
  12. Starting from a short end, tightly roll the cake using the parchment paper to assist.
  13. Dust with caster sugar and transfer to a wire rack, seam-side down, to cool completely.
  14. **For the Chocolate Variation:** Substitute 15g cocoa powder for 15g of plain flour in step 6. When baked, roll the cake with the parchment paper inside to prevent cracking. Once completely cold, proceed with the chocolate icing steps below.
  15. **Chocolate Butter Icing (for Chocolate Variation):** Prepare a simple chocolate butter icing using your favorite recipe (approximately 100g softened butter, 150g icing sugar, 2 tbsp cocoa powder, and milk to desired consistency).
  16. Carefully unroll the cooled chocolate swiss roll.
  17. Spread just over half of the chocolate icing evenly over the cake.
  18. Reroll the cake tightly.
  19. Spread the remaining icing over the top. Optionally, mark with a fork to resemble a Yule log. Add a sprig of holly or a candy robin for a festive touch.
