- Place the following in a 3 1/2 to 5-quart crock pot: 1 large carrot, chopped; 1 bell pepper (any color), chopped; 1 medium onion, chopped; 4 cloves garlic, minced; 1 (15-ounce) can cannellini beans, rinsed and drained; 1 (28-ounce) can crushed tomatoes, undrained; the chicken; and 1 lb Andouille sausage, sliced.
- In a separate bowl, whisk together: 2 cups chicken broth, 1/2 cup dry white wine (or additional chicken broth), 1 tablespoon chopped fresh parsley, 1 teaspoon dried thyme, 1/2 teaspoon red pepper flakes, and 2 bay leaves.
- Pour the liquid mixture into the crock pot.
- Cover and cook on low for 7-8 hours, or on high for 3 1/2-4 hours.
- Before serving, remove the bay leaves and discard.
