  3. Coarsely grind 4 medium cucumbers, 2 medium onions, 2 large red bell peppers, 2 medium apples, and 1 medium head of cauliflower in a food processor. Combine the ground vegetables in a large bowl with 32 ounces (4 cups) of water and 1 cup of salt. Soak overnight in the refrigerator.
  4. The next morning, drain the vegetable mixture thoroughly in a colander.
  5. Transfer the drained vegetables to a large, heavy-bottomed pot. Add the dressing ingredients (see below).
  6. In a separate bowl, whisk together the paste ingredients (see below). Stir into the vegetable mixture.
  7. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low, and simmer for 90 minutes, stirring occasionally, until the relish has thickened.
  8. While the relish simmers, sterilize your jars by boiling them in water for 10 minutes. Immediately fill the hot, sterilized jars with the hot relish, leaving ½ inch headspace.
  9. Seal the jars tightly and process in a boiling water bath for 10 minutes (adjust processing time based on your altitude).
  10. Allow the jars to cool completely. Makes approximately 10 cups.
