How to Make Edna's Sunshine Relish

  1. Peel 4 medium cucumbers and 2 medium onions.
  2. Remove the seeds from 2 large red bell peppers.
  3. Coarsely grind 4 medium cucumbers, 2 medium onions, 2 large red bell peppers, 2 medium apples, and 1 medium head of cauliflower in a food processor. Combine the ground vegetables in a large bowl with 32 ounces (4 cups) of water and 1 cup of salt. Soak overnight in the refrigerator.
