Como fazer Fruit Chutney Zwt South Africa

  1. Chop 1 cup of dried apricots, 1/2 cup dried figs, and 1/2 cup raisins (excluding sultanas).
  2. Combine the chopped dried fruit and 1 cup of water in a large mixing bowl. Cover and let stand overnight.
  3. Do not drain the fruit.
  4. Add 1 cup sultanas, 1 cup brown sugar, 1/2 cup white vinegar, 1/2 cup apple cider vinegar, 1 teaspoon ground ginger, 1 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, 1/4 teaspoon ground allspice, and a pinch of salt to the fruit mixture. Stir well.
  5. Transfer the mixture to a heavy-bottomed saucepan.
  6. Simmer over low heat until the sugar is completely dissolved, stirring occasionally.
  7. Bring the mixture to a boil, then reduce the heat to low.
  8. Simmer for approximately 1 hour and 30 minutes, or until the chutney has thickened considerably, stirring occasionally to prevent sticking.
  9. While still hot, carefully pour the chutney into sterilized jars, filling to within 1/2 inch of the top.
  10. Secure with airtight plastic lids (do not use metal lids as the spices and vinegar may cause corrosion).
  11. Let the chutney mature in a cool, dark, dry place for 6-8 weeks before enjoying. The flavors will deepen and mellow over time.
