  5. Transfer the mixture to a heavy-bottomed saucepan.
  6. Simmer over low heat until the sugar is completely dissolved, stirring occasionally.
  7. Bring the mixture to a boil, then reduce the heat to low.
  8. Simmer for approximately 1 hour and 30 minutes, or until the chutney has thickened considerably, stirring occasionally to prevent sticking.
  9. While still hot, carefully pour the chutney into sterilized jars, filling to within 1/2 inch of the top.
