- Cut 2 lbs beef into 2-inch cubes.
- Dice 4 slices bacon.

- Peel and thinly slice 1/3 of a large onion (about 1/2 cup) and 1/3 cup carrots. Add to the marinade with 1 tsp salt and 1/2 tsp black pepper.
- Marinate for at least 12 hours, turning occasionally.
- Peel the remaining onion and carrots. Quarter the onion and leave the carrots whole.
- Heat 2 tbsp olive oil in a large heavy skillet over medium heat. Fry the diced bacon and quartered onion until golden brown (about 8-10 mins). Transfer to a casserole dish.
- Remove the beef from the marinade, reserving the marinade. Drain the beef well.
- Brown the beef in the remaining oil in the skillet. Add to the casserole dish with the bacon and onions.
- Pour the reserved marinade and marinated vegetables into the skillet. Stir well to scrape up any browned bits.
- Add the whole carrots, 2 tbsp brandy, and 2 tbsp fresh herbs (such as thyme and rosemary).
- Zest and juice 1/2 an orange. Add the zest and 1 tbsp of the juice to the sauce.
- Season the sauce with 1/2 tsp salt and 1/4 tsp black pepper.
- Pour the sauce over the meat and onions in the casserole dish. Cover.
- Cook in a preheated slow cooker on low for 2 hours and 15 minutes (or until beef is very tender).
- To serve, remove any herb sprigs before serving.
- Serve over spaghetti, macaroni, or noodles, topped with butter, grated Parmesan cheese, and chopped parsley.
