  2. Dice 4 slices bacon.

  5. Peel and thinly slice 1/3 of a large onion (about 1/2 cup) and 1/3 cup carrots. Add to the marinade with 1 tsp salt and 1/2 tsp black pepper.

  7. Peel the remaining onion and carrots. Quarter the onion and leave the carrots whole.
  8. Heat 2 tbsp olive oil in a large heavy skillet over medium heat. Fry the diced bacon and quartered onion until golden brown (about 8-10 mins). Transfer to a casserole dish.
  9. Remove the beef from the marinade, reserving the marinade. Drain the beef well.
  10. Brown the beef in the remaining oil in the skillet. Add to the casserole dish with the bacon and onions.
  11. Pour the reserved marinade and marinated vegetables into the skillet. Stir well to scrape up any browned bits.
  12. Add the whole carrots, 2 tbsp brandy, and 2 tbsp fresh herbs (such as thyme and rosemary).
  13. Zest and juice 1/2 an orange. Add the zest and 1 tbsp of the juice to the sauce.
  14. Season the sauce with 1/2 tsp salt and 1/4 tsp black pepper.
  15. Pour the sauce over the meat and onions in the casserole dish. Cover.
  16. Cook in a preheated slow cooker on low for 2 hours and 15 minutes (or until beef is very tender).
  17. To serve, remove any herb sprigs before serving.
  18. Serve over spaghetti, macaroni, or noodles, topped with butter, grated Parmesan cheese, and chopped parsley.
