  1. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat.

  7. Remove from heat and stir in 5 ounces fresh spinach and 1 tablespoon lemon juice.
  8. Cover and let steam for 15 minutes to allow the rice to finish cooking and the spinach to wilt.
  9. Fluff with a fork before serving. Enjoy!
