Ingredients for Acadia S Cherry Sherry Beer Can Chicken

  • Frying Chicken
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon dried savory (or 1 tablespoon fresh savory)
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh parsley
  • 1 can (12 ounces) cherry soda
  • Sherry Wine

How to Make Acadia S Cherry Sherry Beer Can Chicken

  1. Preheat grill to medium-high heat.
  2. Remove giblets from the chicken cavity and discard.
  3. Pour out all but 1/2 cup of cherry soda from the can into a glass.
  4. Add 1/4 cup of sweet cream sherry to the can with the remaining soda.
  5. In a small bowl, whisk together 2 tablespoons olive oil, 1 teaspoon dried thyme, 1 teaspoon dried savory, 1 tablespoon chopped fresh basil, and 1 tablespoon chopped fresh parsley.
  6. Generously rub the herb mixture all over the chicken.
  7. Place the chicken on top of the soda can (can upright inside the chicken cavity).
  8. Place the chicken and soda can in a foil pan for easy cleanup and to catch any drips. Place the pan on the preheated grill.
  9. Reduce the grill heat to medium and cook for approximately 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
  10. Remove the chicken from the grill. Carefully remove the soda can and let the chicken rest for 15-20 minutes before carving. The juices will be reddish from the cherry soda.
  11. Carve and serve! Enjoy your incredibly moist and flavorful chicken.

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
