  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • Pure Vanilla Extract
  • 2 large eggs
  • Vanilla Wafers
  • 1 cup berry pie filling (or fresh berries)

How to Make Berry Cream Cheese Tarts

  1. Preheat oven to 350°F (175°C).
  2. Place a paper cupcake liner in each cup of a 12-cup muffin tin.
  3. In a medium bowl, beat 8 ounces (225g) of softened cream cheese with an electric mixer until light and fluffy.
  4. Add 1/2 cup (100g) granulated sugar and 1 teaspoon vanilla extract; beat until well combined.
  5. Add 2 large eggs one at a time, beating well after each addition.
  6. Place one vanilla wafer, flat side down, in the bottom of each prepared muffin cup.
  7. Spoon the cream cheese mixture evenly over the wafers, filling each cup about ¾ full.
  8. Bake for 20-25 minutes, or until the edges are set and the center is just slightly jiggly.
  9. Let the tarts cool completely in the muffin tin before removing.
  10. Serve topped with your favorite berry pie filling (about 1/4 cup per tart). Fresh berries can also be used as a topping.
