- Heat 1 tablespoon of olive oil in a large saucepan over medium heat. Add 1 chopped onion and 2 cloves of minced garlic, and sauté for 3-5 minutes until softened.
- Add 4 cups of turkey broth, 1 (14.5 ounce) can of diced tomatoes (undrained), 1 teaspoon dried basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a boil.
- Stir in 1 cup of cooked pasta (such as ditalini or small shells), 1 cup of chopped mixed vegetables (carrots, celery, and peas are great!), and 2 cups of shredded cooked turkey.
- Reduce heat to low, cover, and simmer for 7-10 minutes, or until the pasta and vegetables are tender.
- Stir in 1/4 cup of chopped fresh basil and 1 tablespoon of lemon juice. Heat through for 1-2 minutes.
- Serve hot and garnish with extra fresh basil and a sprinkle of Parmesan cheese (optional).
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
