How to Make Almost Chocolate No Egg Banana Muffins
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, mash 3 ripe bananas with a fork.
- Add 1/2 cup (113g) melted margarine and 1 cup (200g) granulated sugar to the mashed bananas. Mix well.
- In a separate bowl, whisk together 2 cups (250g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in 1/2 cup (30g) unsweetened cocoa powder.
- Add 1 cup (150g) raisins (or 1 cup of chopped nuts/chocolate chips).
- If the batter seems too dry, add 1-2 tablespoons of water, 1 tablespoon at a time, until desired consistency is reached.
- Fill muffin cups about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
