How to Make Amazing Baked Lemon Garlic Chicken Thighs And Potatoes

  1. Preheat oven to 350°F (175°C).
  2. Remove most of the skin from 6 bone-in, skin-on chicken thighs, leaving a small patch of skin on top of each thigh.
  3. Mince 4 cloves of garlic and create a paste with 1 teaspoon of salt using the side of a large knife. Rub this paste all over the tops of the chicken thighs.
  4. Peel 2 lbs of potatoes (Yukon Gold or russet recommended) and cut into 8 wedges each.
  5. Toss potatoes with 2 tablespoons olive oil, 1 teaspoon salt, and ½ teaspoon black pepper.
  6. Place chicken thighs in a 9x13 inch baking pan.
  7. Arrange potato wedges around the chicken thighs.
  8. Pour 1 cup of chicken broth into the bottom of the pan.
  9. Squeeze the juice of 1 lemon over the chicken and potatoes.
  10. Bake for 45 minutes.
  11. Flip the chicken thighs and potatoes.
  12. Bake for an additional 50 minutes, or until chicken is cooked through (internal temperature of 165°F) and potatoes are tender. Add more chicken broth during baking if the pan becomes dry.
  13. Let rest for 5 minutes before serving.
