How to Make An Australian White Christmas

  1. Line a 20x30cm slice tin with baking paper, leaving an overhang on the sides to lift the slice out later.
  2. In a large bowl, combine the powdered milk, rice bubbles, chopped cherries, sultanas, icing sugar, and desiccated coconut.
  3. Make a well in the center of the dry ingredients.
  4. In a saucepan over low heat, melt the Copha. Remove from heat and let it cool slightly (until just warm to the touch).
  5. Gradually pour the melted Copha into the well of dry ingredients, mixing gently with a spatula or wooden spoon until just combined. Be careful not to overmix.
