Ingredients for An Australian White Christmas
- 4 cups rice bubbles (puffed rice)
- 1 cup powdered milk
- Desiccated Coconut
- Glace Cherries
- Sultana
- 1 1/2 cups icing sugar
- 250g Copha (or other vegetable shortening)
How to Make An Australian White Christmas
- Line a 20x30cm slice tin with baking paper, leaving an overhang on the sides to lift the slice out later.
- In a large bowl, combine the powdered milk, rice bubbles, chopped cherries, sultanas, icing sugar, and desiccated coconut.
- Make a well in the center of the dry ingredients.
- In a saucepan over low heat, melt the Copha. Remove from heat and let it cool slightly (until just warm to the touch).
- Gradually pour the melted Copha into the well of dry ingredients, mixing gently with a spatula or wooden spoon until just combined. Be careful not to overmix.
- Spoon the mixture into the prepared tin and spread evenly.
- Cut another sheet of baking paper slightly larger than the tin. Place it on top of the mixture. Smooth the surface by gently pressing down with your hands.
- Refrigerate for at least 30 minutes, or until firm.
- Once set, lift the slice out of the tin using the baking paper overhang.
- Carefully peel off the top layer of baking paper.
- Cut into 1-inch squares or triangles.
