  2. In a double boiler, or a heatproof bowl set over a pan of simmering water, combine the shaved chocolate with 1/4 cup (60ml) of hot water.
  3. Stir gently and constantly until the chocolate is completely melted and smooth. Remove from heat.
  4. Whisk in 3 tablespoons (45ml) of hot water until fully incorporated and the mixture is velvety.
  5. Pour the chocolate mixture into a pitcher or divide evenly among four mugs.
  6. Heat 3/4 cup (177ml) of whole milk per mug (or serve milk separately in a small pitcher).
  7. Add hot milk to each mug of chocolate. Alternatively, serve the milk separately for guests to customize their drink.
