How to Make Apple And Almond Cake

  1. Preheat oven to 170°C (325°F).
  2. Grease and flour a 22cm (9-inch) round cake pan. Alternatively, line the base with baking paper.
  3. In a large bowl, cream together 175g (1 1/2 sticks) softened unsalted butter, 200g (1 1/2 cups) granulated sugar, and 1 teaspoon vanilla extract using an electric mixer for 8 minutes, or until light and fluffy. Scrape down the sides as needed.
  4. Beat in 4 large eggs one at a time, mixing well after each addition.
  5. Stir in 150g (1 1/2 cups) almond meal.
  6. In a separate bowl, whisk together 175g (1 1/2 cups) all-purpose flour and 150ml (2/3 cup) milk.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the remaining milk, beginning and ending with the dry ingredients. Mix until just combined.
  8. Peel and thinly slice 4-5 medium mid-season apples (about 600g total).
  9. Arrange apple slices slightly overlapping in the prepared cake pan.
  10. Pour the batter over the apples and spread evenly.
  11. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
