How to Make Apple And Almond Cake
- Preheat oven to 170°C (325°F).
- Grease and flour a 22cm (9-inch) round cake pan. Alternatively, line the base with baking paper.
- In a large bowl, cream together 175g (1 1/2 sticks) softened unsalted butter, 200g (1 1/2 cups) granulated sugar, and 1 teaspoon vanilla extract using an electric mixer for 8 minutes, or until light and fluffy. Scrape down the sides as needed.
- Beat in 4 large eggs one at a time, mixing well after each addition.
- Stir in 150g (1 1/2 cups) almond meal.
- In a separate bowl, whisk together 175g (1 1/2 cups) all-purpose flour and 150ml (2/3 cup) milk.
- Gradually add the dry ingredients to the wet ingredients, alternating with the remaining milk, beginning and ending with the dry ingredients. Mix until just combined.
- Peel and thinly slice 4-5 medium mid-season apples (about 600g total).
- Arrange apple slices slightly overlapping in the prepared cake pan.
- Pour the batter over the apples and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a serving plate.
- Serve warm with your favorite custard or whipped cream.
Chef's Tip for Extra Flavor
Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
