How to Make Apple Yum
- Combine 1/2 cup raisins and 2 tablespoons amaretto in a bowl.
- Microwave on high for 1 1/2 minutes.
- Drain any excess liquid.
- In a separate bowl, combine the drained raisins, 4 cups peeled and thinly sliced apples, 1/2 cup granulated sugar, 1/4 cup all-purpose flour, and 1 teaspoon ground cinnamon.
- Toss gently to coat the apples evenly.
- Lay 1 sheet of phyllo dough on a clean work surface. Lightly brush with cooking spray.
- Stack remaining phyllo sheets on top, brushing each sheet with cooking spray between layers.
- Cover with plastic wrap, press gently to seal, and then remove the plastic wrap.
- Spoon the apple mixture along one long edge of the phyllo, leaving a 2-inch border on all sides.
- Fold over the short edge to cover the filling by 2-3 inches.
- Starting from the long edge, tightly roll the strudel like a jelly roll. (Don't worry about being too precise; some looseness is okay.)
- Place the strudel, seam-side down, on a baking sheet lightly coated with cooking spray.
- Cut several small slits in the top of the dough to allow steam to escape.
- Bake at 350°F (175°C) for 35-40 minutes, or until golden brown and the filling is bubbly.
- Let cool slightly before serving warm with low-fat ice cream or yogurt.
