Ingredients for Apple Yum

  • 1/2 cup raisins
  • 2 tablespoons amaretto
  • Granny Smith Apples
  • 1/2 cup granulated sugar
  • All Purpose Flour
  • Ground Cinnamon
  • Phyllo Dough
  • Vanilla Frozen Yogurt

How to Make Apple Yum

  1. Combine 1/2 cup raisins and 2 tablespoons amaretto in a bowl.
  2. Microwave on high for 1 1/2 minutes.
  3. Drain any excess liquid.
  4. In a separate bowl, combine the drained raisins, 4 cups peeled and thinly sliced apples, 1/2 cup granulated sugar, 1/4 cup all-purpose flour, and 1 teaspoon ground cinnamon.
  5. Toss gently to coat the apples evenly.
  6. Lay 1 sheet of phyllo dough on a clean work surface. Lightly brush with cooking spray.
  7. Stack remaining phyllo sheets on top, brushing each sheet with cooking spray between layers.
  8. Cover with plastic wrap, press gently to seal, and then remove the plastic wrap.
  9. Spoon the apple mixture along one long edge of the phyllo, leaving a 2-inch border on all sides.
  10. Fold over the short edge to cover the filling by 2-3 inches.
  11. Starting from the long edge, tightly roll the strudel like a jelly roll. (Don't worry about being too precise; some looseness is okay.)
  12. Place the strudel, seam-side down, on a baking sheet lightly coated with cooking spray.
  13. Cut several small slits in the top of the dough to allow steam to escape.
  14. Bake at 350°F (175°C) for 35-40 minutes, or until golden brown and the filling is bubbly.
  15. Let cool slightly before serving warm with low-fat ice cream or yogurt.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
