How to Make Apricot Glazed Pork Tenderloin
- Preheat your broiler and position the rack 4 inches from the heat source.
- Line a rimmed baking sheet with aluminum foil for easy cleanup.
- Pat the pork tenderloin dry with paper towels. Drizzle with olive oil and season generously with salt and pepper.
- Broil the pork tenderloin for 10 minutes, then flip.
- While the pork is broiling, prepare the glaze: In a small saucepan, whisk together the apricot jam and Dijon mustard until melted and smooth (approximately 3-4 minutes over medium-low heat).
- Remove the glaze from the heat and set aside. Transfer about half of the glaze to a small bowl for brushing.
- Keep the remaining glaze warm in the saucepan.
- Remove the pork tenderloin from the broiler. Brush generously with the reserved glaze.
