How to Make Arroz Central Cafe Central Cafe Rice
- Preheat oven to 350°F (175°C).
- Melt 2 tablespoons of butter in a medium sauté pan. Add 1 tablespoon of olive oil.
- Add 1 cup of long-grain rice, 1/2 medium onion (chopped), 1/2 green bell pepper (chopped), and 2 cloves garlic (minced). Sauté for 2-3 minutes, until rice is lightly browned.
- Pour in 2 cups of chicken stock. Stir well.
- Pour the rice mixture into a 1 1/2-quart baking dish sprayed with non-stick cooking spray.
- Cover the dish tightly with foil or a lid.
- Bake for 25-30 minutes, or until all the liquid is absorbed and the rice is tender and fluffy.
- (Optional) If using roasted green chiles, stir in 1/2 cup (or to taste) of roasted and peeled green chiles during step 4.
