Ingredients for Aussie Scones

  • Self Raising Flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • Caster Sugar
  • 1 large egg, lightly beaten
  • 150ml milk
  • 50g unsalted butter, melted

How to Make Aussie Scones

  1. Preheat your oven to 220°C (425°F).
  2. Melt 50g of butter. In a separate bowl, lightly beat 1 large egg and add 150ml of milk.
  3. In a large bowl, whisk together 225g self-raising flour, 40g caster sugar, 1 tsp baking powder, and a pinch of salt.
  4. Gently pour the melted butter (step 2) into the egg and milk mixture (step 2), mixing lightly.
  5. Add the wet ingredients to the dry ingredients (step 3) and mix until just combined. Do not overmix!
  6. Turn the dough out onto a lightly floured surface.
  7. Pat the dough to a thickness of approximately 2cm.
  8. Use a 5cm cookie cutter (or a knife) to cut out scones.
  9. Gently push the scones together slightly.
  10. Bake for 12-15 minutes, or until golden brown.
  11. Serve warm with clotted cream and jam.
