How to Make Avocado Tequila Linguine
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add 1/2 medium yellow onion, chopped, and 1/2 bell pepper (any color), chopped. Cook for 5 minutes, stirring occasionally, until softened.
- Add 2 cloves garlic, minced, 1-2 small jalapeƱo peppers, finely chopped (remove seeds for less heat), and 2 tablespoons tequila. Cook for another 3-5 minutes, until fragrant.

- Cook for 5-7 minutes, or until tomatoes are softened and the sauce has slightly thickened.
