How to Make Awesome High Heat Holiday Turkey

  1. Pat a 16-18 lb turkey completely dry inside and out using paper towels.
  2. Using your hands, oil the turkey inside and out with 2 tablespoons of vegetable oil.
  3. Carefully cut away any excess skin around the cavity opening and insert a fork to hold the cavity open.
  4. Generously rub 2 tablespoons of your favorite herbs and spices (or just black pepper) all over the turkey using your oiled fingers. (Avoid salt!)
  5. Place the turkey breast-side down on a rack in a large metal roasting pan. Ensure the turkey is not touching the bottom of the pan.
  6. Loosely cover the top of the turkey (including legs and wings) with aluminum foil that has been lightly greased with vegetable oil.
  7. Pour ½ inch (approximately 1 cup) of chicken or turkey broth into the bottom of the roasting pan.
  8. Roast the turkey at 500-525°F (260-270°C) for 2 hours.
  9. Every 45 minutes, check the liquid level in the pan and add more broth (approximately ¼ cup at a time) if needed to maintain the ½ inch depth.
  10. After 2 hours, carefully remove the foil.
  11. Spoon your favorite stuffing (cooked separately) into the turkey cavity.
  12. Return the turkey to the rack, breast-side up.
  13. Continue to cook for another 30-45 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh registers 175°F (80°C).
  14. Remove the turkey from the oven and let it rest for at least 20 minutes before carving. This allows the juices to redistribute, resulting in extra-tender meat.
