How to Make Awesome Pecans
- In a large skillet, warm 1/2 cup honey over very low heat.
- Add 1 teaspoon chipotle powder and 1/2 teaspoon ground cumin.
- Stir constantly until smooth and spices are well distributed (about 1 minute).
- Add 4 cups pecans to the skillet. Continue cooking over low heat, stirring frequently, until all surfaces are well coated with the honey mixture (about 5-7 minutes). Do not let the mixture boil.
- Transfer pecans to a parchment-lined baking sheet, separating them into a single layer.
- Bake at 275°F (135°C) for 30-40 minutes, or until toasted but not caramelized, shaking the pan halfway through.
- While pecans bake, in a large bowl, mix 1/4 cup granulated sugar and 1 teaspoon kosher salt.
- When pecans are done and still warm, add them to the bowl with the sugar and salt.
- Gently toss with your hands until the pecans are cool and evenly coated with the sugar/salt mixture.
- Store in an airtight glass jar for up to 2 weeks.
