  1. Place the quartered potatoes in a large saucepan. Add enough chicken broth to barely cover the potatoes.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer until the potatoes are easily pierced with a fork, about 10-15 minutes.
  4. Drain the potatoes, reserving about 1 cup of the cooking liquid.
  5. Return the potatoes to the saucepan. Add 1 cup of the reserved cooking liquid and mash until smooth using a potato masher or electric mixer.

  7. If the mixture is too thick, add more reserved cooking liquid, 1 tablespoon at a time, until you reach your desired consistency.
