- Place the quartered potatoes in a large saucepan. Add enough chicken broth to barely cover the potatoes.

- Drain the potatoes, reserving about 1 cup of the cooking liquid.

- If the mixture is too thick, add more reserved cooking liquid, 1 tablespoon at a time, until you reach your desired consistency.
