How to Make Almond Legend Cake

  1. Preheat oven to 350°F (175°C). Generously grease a 10-inch bundt pan or tube pan.
  2. Gently press 1/2 cup (50g) chopped almonds into the bottom and halfway up the sides of the prepared pan.
  3. In a large bowl, combine one 15.25 oz box of your favorite white cake mix, 1/2 cup (120ml) orange juice, water as directed on cake mix box, 1/3 cup (75ml) vegetable oil, 1 teaspoon almond extract, and 3 large eggs. Beat at low speed until just moistened.
  4. Beat at high speed for 2 minutes.
  5. Carefully stir in one whole almond. Pour batter into the prepared pan.
  6. Bake at 350°F (175°C) for 30-45 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cool upright in the pan for 10 minutes.
  8. Invert the cake onto a serving plate.
  9. While the cake is still warm, prepare the glaze (recipe below).
  10. Spoon the glaze evenly over the warm cake.
  11. Let the cake cool completely before serving.
