How to Make Bacon Cheeseburger Roll Ups
- Cook 1 pound ground beef, 4 slices cooked bacon (chopped), and 1/2 cup chopped onion in a large skillet over medium heat until the beef is no longer pink, about 8-10 minutes.
- Drain off any excess grease.
- Stir in 1 cup shredded cheddar cheese and cook until melted and combined, about 2-3 minutes.
- Remove from heat and set aside to cool slightly.
- Preheat oven to 400°F (200°C).
- Gently flatten each of 8 refrigerated biscuits to a 5-inch circle using a rolling pin or your hands.
- Spoon 1/3 cup of the beef mixture onto the center of each flattened biscuit.
- Fold the sides and ends of the biscuit over the filling, then roll up tightly to enclose the filling completely.
- Place the roll-ups seam-side down on a greased baking sheet.
- Bake for 18-20 minutes, or until golden brown and heated through.
- While the roll-ups bake, whisk together 2 tablespoons ketchup and 1 tablespoon yellow mustard in a small bowl.
- Serve the Bacon Cheeseburger Roll-Ups immediately with the ketchup-mustard mixture for dipping.
