- Preheat oven to 375°F (190°C).
- Season 2 (6 oz each) bone-in pork chops generously with salt and freshly ground black pepper.
- Thinly slice 1/2 medium red onion into slivers.
- Arrange onion slivers on top of each pork chop.
- Place 1/4 of a red bell pepper (about 1/2 cup, skin side down) on top of the onions on each chop.
- Crumble 4 oz brie cheese over the red pepper.
- Wrap each pork chop with 3 slices of bacon, securing with toothpicks if needed.
