How to Make Baked Cheesy Potato Skins Cooking Light Style
- Preheat oven to 425°F (220°C).
- Prick 4 large russet potatoes several times with a fork. Bake for 1 hour, or until easily pierced with a fork.
- Once cool enough to handle, carefully cut potatoes in half lengthwise.
- Using a spoon, scoop out the potato flesh, leaving a 1/4-inch shell. Set aside the potato flesh (can be mashed and used later!).

- Bake for another 3-5 minutes, or until cheese is melted and bubbly.
- Top each potato skin with a dollop of sour cream (about 1 tablespoon per skin) and sprinkle with 1 tablespoon chopped fresh chives.
