How to Make Banana Split Cheesecake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla and salt.
  3. In a separate bowl, mash bananas. Gently fold mashed bananas into the cream cheese mixture.
  4. Pour half of the batter into the prepared pan. Spread evenly.
  5. Arrange chocolate chips and maraschino cherries over the first layer of batter.
  6. Pour the remaining batter over the chocolate chips and cherries. Spread evenly.
  7. Bake for 1 hour and 30 minutes, or until the center is just set. (A slight jiggle is okay).
  8. Let the cheesecake cool completely in the pan before refrigerating for at least 8 hours, or preferably overnight, to allow it to set completely.
  9. Once chilled, carefully remove the sides of the springform pan. Slice and serve.
