Ingredients for Banberry Surprise
- Yellow Cake Mix
- Strawberry Gelatin
- 1/2 cup boiling water
- 1 (12 oz) can chilled strawberry soda
- 3-4 ripe bananas, thickly sliced
- Vanilla Instant Pudding Mix
- 1 1/2 cups half-and-half
- 1 (8 oz) container whipped topping
How to Make Banberry Surprise
- Preheat oven to the temperature specified on your cake mix box. Prepare and bake a 9x13 inch cake according to the package directions.
- In a small bowl, dissolve 1 packet (3 oz) of unflavored gelatin in 1/2 cup of boiling water. Stir until completely dissolved.
- Add 1 (12 oz) can of chilled strawberry soda to the gelatin mixture. Stir well to combine.
- Refrigerate the strawberry gelatin mixture until it thickens to a syrupy consistency, about 1-2 hours.
- Once the cake has completely cooled, use a toothpick, fork, or potato peeler to poke numerous holes across the top of the cake.
- Gently pour the chilled strawberry syrup over the cake, allowing it to soak into the holes.
- Top the cake with thickly sliced bananas, arranging them evenly across the surface.
- In a separate bowl, prepare 1 (3.4 oz) package of instant vanilla pudding according to the package directions, using 1 1/2 cups of half-and-half.
- Gently fold in 1 (8 oz) container of whipped topping into the pudding mixture.
- Spread the pudding mixture evenly over the layer of bananas.
- Refrigerate the Banberry Surprise for at least 2 hours to allow the flavors to meld and the pudding to set completely.
- Completely cover the cake with additional banana slices if desired, before serving.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
