How to Make Awesome Twice Baked Potatoes
- Preheat your oven to 400°F (200°C).
- Wash and pierce 4 large russet potatoes several times with a fork.
- Bake potatoes for 1 hour, or until easily pierced with a fork.
- Cut each potato in half lengthwise.
- Scoop out the potato flesh, leaving a 1/4-inch shell. Set shells aside.
- In a large bowl, mash the scooped potato flesh with a potato masher or fork.
- Add 3/4 cup shredded cheddar cheese, 1/2 cup sour cream, 1/4 cup picante sauce, 1/2 cup cooked and crumbled bacon, and 1/4 cup chopped green onions.
- Mix well to combine.
- Spoon the potato mixture back into the potato shells.
- Place the stuffed potato shells on a baking sheet.
- Broil for 2-3 minutes, or until the tops are lightly browned.
