How to Make Bloody Mary Pot Roast With Fall Vegetables

  1. Preheat oven to 400°F (200°C).
  2. Season the roast generously with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the roast on all sides until nicely browned, about 12 minutes total.
  5. Remove roast from skillet and set aside.
  6. In the same skillet, add beef broth and scrape up any browned bits from the bottom. Add Bloody Mary mix, horseradish, celery seed, and bay leaf. Stir well.
  7. Place the seared roast in a 5-6 quart slow cooker.
  8. Pour the Bloody Mary mixture over the roast.
  9. Arrange leeks, celery, rutabaga, and bell pepper on top of the roast.
  10. Cover and cook on low for 9-10 hours, or on high for 4-5 hours, or until the meat is fork-tender.
  11. Remove the roast and vegetables from the slow cooker using a slotted spoon and set aside, keeping warm.
  12. Skim off excess fat from the cooking liquid in the slow cooker.
  13. In a saucepan, whisk together cold water and flour until smooth.
  14. Gradually whisk the flour mixture into the cooking liquid in the slow cooker over medium heat.
  15. Bring to a simmer and cook, stirring constantly, until the gravy has thickened, about 2 minutes.
  16. Stir in parsley, vodka, and red wine vinegar.
  17. Season with hot pepper sauce, salt, and pepper to taste.
  18. Serve the pot roast and vegetables over noodles (optional), topped with the delicious Bloody Mary gravy.
  19. Garnish with fresh celery leaves.
