How to Make Blueberry Cordial
- In a large saucepan, combine 1 kg (2.2 lbs) fresh or frozen blueberries, 1 kg (2.2 lbs) granulated sugar, and 750ml (25 fl oz) water.
- Bring the mixture to a simmer over medium heat, stirring frequently with a wooden spoon to dissolve the sugar.
- Gently mash the blueberries as they soften using a spoon or potato masher. (An immersion blender can be used, but a masher is more effective for achieving the desired texture).
- Continue to simmer until the sugar is completely dissolved and the mixture has thickened slightly (about 15-20 minutes).
- Remove from heat and let cool completely.
- For maximum flavor, cover and refrigerate overnight. (This step is optional but highly recommended).
- The next day, strain the cordial through a fine-mesh sieve lined with cheesecloth or a coffee filter into a clean bottle or container. Gently press on the pulp to extract as much juice as possible.
- Set aside the remaining blueberry pulp – delicious with ice cream!
- To serve, mix 1 part cordial with 5-6 parts water or sparkling water. Adjust the ratio to your preferred sweetness.
- Refrigerate the cordial for up to 2 weeks.
