How to Make Brownie Pops
- Preheat oven to 350°F (175°C).
- Line a 13x9 inch baking pan with foil, leaving about 2 inches of overhang on the sides.
- Lightly grease the foil with cooking spray.
- Prepare your favorite boxed brownie mix according to package directions for a 13x9 inch pan.
- Let the brownies cool completely, approximately 1 hour.
- Place the cooled brownies in the freezer for 30 minutes to firm up.
- Remove the brownies from the pan using the foil overhang.
- Carefully peel the foil away from the brownies.
- Cut the brownies into 24 rectangular bars (6 strips lengthwise and 4 rows across), each approximately 1 1/2 x 3 1/4 inches.
- Gently insert a lollipop stick or small wooden dowel into the end of each brownie bar, peeling away any remaining foil.
- Place the brownie pops on a baking sheet lined with parchment paper and freeze for another 30 minutes.
- In a microwave-safe bowl, combine 1 cup of chocolate chips and 1 tablespoon of shortening.
- Microwave on high for about 1 minute, then stir until smooth. Microwave in 5-second intervals if needed, until melted and smooth.
- Dip the top 1/3 to 1/2 of each brownie pop into the melted chocolate.
- Immediately decorate with sprinkles, chopped nuts, candy, etc.
- Place the decorated brownie pops on wax paper or parchment paper to set.
