How to Make Cafe Diablo

  1. In a 3-quart saucepan, combine 2 cups water, 1/2 cup packed brown sugar, 4 ounces dark chocolate (chopped), 6 whole cloves, and 1 cinnamon stick.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat to low and simmer uncovered for 15 minutes, stirring occasionally.
  4. Remove from heat and stir in 1 cup freshly brewed strong coffee.
  5. Cover and let stand for 5 minutes to allow the flavors to meld.
  6. Stir in 1 teaspoon vanilla extract.
  7. Line a fine-mesh sieve with 4 layers of cheesecloth and place it over a bowl. Slowly pour the coffee mixture through the cheesecloth to strain out the solids.
  8. Return the strained coffee to the saucepan and keep warm over very low heat.
  9. In a small, long-handled saucepan, gently heat 1/4 cup brandy until warm (do not boil).
  10. Carefully remove the brandy from the heat. Using a long match or lighter, ignite the brandy (be cautious and work in a well-ventilated area).
  11. Slowly pour the flaming brandy over the warm coffee in the saucepan. Allow the flames to burn out completely.
  12. Stir gently to combine the brandy and coffee.
  13. Pour the Cafe Diablo into mugs or heatproof glasses.
  14. Top each serving with a dollop of whipped cream and 1 tablespoon of coffee liqueur (optional).
  15. Garnish with a cinnamon stick, if desired.
