How to Make Cajun Style Pork Chops

  1. In a small bowl, combine 1 tablespoon paprika, 1 teaspoon oregano, 1 teaspoon onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Sprinkle both sides of the pork chops generously with the spice mixture.
  3. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Tilt the skillet to coat the bottom lightly.
  4. Add pork chops and cook for 3-4 minutes per side, or until the internal temperature reaches 145°F (63°C) and the pork is slightly pink in the center.
  5. Transfer pork chops to a serving platter and cover to keep warm.
  6. Return the skillet to medium-high heat.
  7. Add the remaining 2 teaspoons of oil and tilt the skillet to coat the bottom lightly.
  8. Add 1 cup corn kernels (fresh or frozen), 1/2 medium onion (chopped), 1/2 bell pepper (chopped), and 1-2 jalapeños (minced, to taste).
  9. Cook for 2-3 minutes, or until the onions are translucent, stirring frequently.
  10. Add 1 (14.5 ounce) can of diced tomatoes (undrained) and cook for 2 more minutes, or until the tomatoes are just tender.
  11. Remove from heat, sprinkle with the remaining 1/4 teaspoon salt, cover, and let stand for 2 minutes to allow the flavors to meld.
  12. Serve the delicious maque choux generously over the top of the pork chops.
