How to Make Apricot Sauce
- Combine 1 pound fresh apricots and 1 cup apple juice in a medium saucepan. Bring to a rolling boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally to prevent sticking.
- Remove from heat and let the apricots cool completely.
- Strain the apricots, reserving the cooking liquid. Set aside the cooked apricots.
- Chop the cooled apricots and set aside.
- In a 2-quart saucepan, whisk together ½ cup orange juice, ¼ cup honey, ¼ cup water, 2 tablespoons cornstarch, 1 teaspoon ground ginger, and ½ teaspoon ground cinnamon.
- Cook over medium heat, whisking constantly, until the sauce has thickened slightly (about 2-3 minutes).
- Remove from heat and stir in the chopped apricots, ½ cup of the reserved apricot cooking liquid, and 2 tablespoons of vermouth (optional).
