How to Make Cappuccino Muffins

  1. Preheat oven to 190°C (375°F) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together 200g all-purpose flour, 150g granulated sugar, 4 tsp baking powder, 1 tsp ground cinnamon, and 1/2 tsp salt.
  3. In a separate bowl, whisk together 250ml milk and 2 tbsp instant coffee granules until the coffee is completely dissolved.
  4. Add 100ml vegetable oil, 1 large egg, and 1 tsp vanilla extract to the wet ingredients. Whisk until well combined.
  5. Gently pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in 100g chocolate chips.
  6. Fill each muffin cup about ¾ full.
  7. Bake for 17-20 minutes, or until a toothpick inserted into the center comes out clean.
