Ingredients for Apple Cupcakes

  • Apples
  • 1 ½ cups granulated sugar
  • ¼ cup water
  • ½ cup (1 stick) unsalted butter
  • 2 tablespoons Pampered Chef Cinnamon Plus (or 1 tablespoon ground cinnamon)
  • ½ teaspoon ground nutmeg
  • Ground Cloves
  • 2 cups all-purpose flour
  • Baking Soda

How to Make Apple Cupcakes

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large saucepan, combine 2 cups grated apples, 1 ½ cups granulated sugar, ¼ cup water, ½ cup (1 stick) unsalted butter, 2 tablespoons Pampered Chef Cinnamon Plus (or 1 tablespoon ground cinnamon, ½ teaspoon ground nutmeg), and ¼ teaspoon ground cloves. Bring to a boil over medium heat.
  3. Reduce heat and simmer for 5 minutes, stirring occasionally, until the apples soften slightly.
  4. Remove from heat and let cool completely.
  5. In a separate bowl, whisk together 2 cups all-purpose flour and 1 teaspoon baking soda.
  6. Gently fold the dry ingredients into the cooled apple mixture until just combined. Do not overmix.
  7. Fill cupcake liners about ⅔ full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Cupcakes should spring back when lightly touched.
  9. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely. Frost and enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
